Your best bet would be a spring. There’s not a lot of shore diving if you want to see your hands.
Alexander springs is smaller, but very cool and pretty close to the west side of Orlando. Blue springs is a fun dive on the east side of Orlando. Rainbow river is a great drift dive, there is a water taxi that takes you up river. You can do all of those without a guide or someone experienced and get full enjoyment. They are all also only a few dollars per person.
