I’ve been on a few vacations where I’ve roomed with complete strangers. They were all very nice, polite and considerate. I had no problems with any of them. None of them borrowed, or even looked through, my stuff without asking. I’d have no problem rooming with whomever I was asked to room with.
That said, I still prefer my privacy and would pay a single supplement to have my own room.
